Light straw in color, this Sauvignon Blanc exhibits sweet Jasmine floral aromas with hints of mandarin, key lime, green melon and dry herbal notes typical of this warmer growing region. Additional flavors of ripe grapefruit lead into hints of shortbread of and zesty peppercorn. Finishing with crisp and balanced acidity, this wine is totally dry and focuses on the grape varietal character without any oak complexities. Enjoy well-chilled paired with salads, shellfish, or perhaps a simple glass on the porch.
Organic fruit was night picked and delivered to winery in early morning. Pressed with a bladder press, cold settled, racked to clean, low solids Juice and fermented cool in stainless steel tanks to accentuate varietal notes. New wine was racked away from the yeast lees, fined with bentonite for stability and held cold until bottling. No malolactic ferment.
